Wild Turkey Breakfast Potato

Wild turkey sausage, bacon, cheese and an egg stuffed into a potato and covered with a pan gravy for breakfast? Sign us up. This meal might give you the extra kick of energy you needed to call in that bird, or it might make you crawl back into bed. Either way, this is delicious.

Ingredients

Breakfast Sausage:

1 pound ground turkey

¾ teaspoon ground sage

½ teaspoon salt

½ teaspoon pepper

½ teaspoon ground thyme

1 teaspoon garlic powder

¼ teaspoon dried marjoram

½ teaspoon smoked paprika

¼ teaspoon dried red pepper flakes

Gravy:

2 tablespoons bacon grease or butter

¼ cup flour

2½ cups whole milk

Salt and pepper to taste

Other Ingredients:

Fried egg

Cooked bacon

Cheddar cheese

Baked Potato

Instructions

1. Make your sausage by combining all ingredients, place in refrigerator and let sit at least 1 hour, or as long as overnight.

2. Cook your baked potatoes or use leftovers. This is a great way to use extra baked potatoes from last night’s dinner, for an amazing breakfast.

3. Brown your wild turkey sausage in a skillet with a little bacon grease or butter since wild turkey lacks fat. Remove and set aside.

4. In the same skillet over medium heat, add grease or butter and then flour until its completely combined and smooth. Keep whisking until the flour is slightly browned with a nutty scent.

5. Slowly add milk, whisking as you pour. Make sure it’s fully combined as you add more. Salt and pepper to taste, add red pepper flakes if you want more of a kick. Continue cooking until desired thickness is reached.

6. Open your hot potato and add cheese, bacon, breakfast sausage, gravy and top with a perfectly fried egg.
