Wild Turkey Meatloaf Sandwich

The best part about making meatloaf is using it for sandwiches the next day!

Ingredients

  • 2 slices of sturdy bread (like Texas toast, brioche or a good quality white bread, slightly toasted if desired)
  • 2 slices (about half-inch thick each) leftover wild turkey meatloaf, preferably chilled (makes it easier to slice and handle)
  • 1-2 tablespoons horseradish mayonnaise (recipe below, or use store-bought)
  • 1-2 leaves of crisp lettuce (such as butter lettuce, green leaf or romaine)
  • 1 slice of pepper jack cheese
  • 1-2 tablespoons crispy fried onions (French’s brand or homemade)

Horseradish Mayonnaise:

  • 2 tablespoons quality mayonnaise
  • Half to 1 teaspoon prepared horseradish (adjust to your spice preference)
  • Pinch of black pepper (optional)

Instructions

  1. In a small bowl, combine the mayonnaise, prepared horseradish and black pepper (if using). Stir well until thoroughly mixed. Taste and adjust horseradish to your liking.
  2. Lightly toast bread if you prefer, then spread a thin layer of the horseradish mayonnaise on the inside of both slices.
  3. On one slice of bread, lay down lettuce leaf(s).
  4. Carefully place two slices of wild turkey meatloaf on top of the lettuce.
  5. Place the slices of pepper jack cheese directly on top of the second meatloaf slice. Slightly melt the cheese with a torch or place it under a broiler for a minute (watch carefully!).
  6. Sprinkle a generous amount of crispy fried onions over the melted or semi-melted cheese.
  7. Place the remaining slice of bread, horseradish mayonnaise side down, on top of the sandwich.
  8. Enjoy your delicious and hearty sandwich immediately!
