We’re a leftovers household. I’m not really sure why or how anybody got on some high horse and decided to kick the notion that leftovers weren’t delicious. I cooked up an insanely delicious two-pound venison meatloaf for the fam, and we had PLENTY of leftovers that we spent days enjoying.

I always try to find ways to make new dishes with what we’ve already got in the fridge. Example: Say I grilled some backstrap one night for steaks. Well, the next night we might make venison tacos with the same. It’s just being resourceful without burning yourself out on the same food night after night.

This recipe is a perfect example of that. So, take that beautiful chunk of loaf and pile it high for this insanely delicious, and once-again simple, recipe for a venison meatloaf sandwich.

Ingredients

  • Cooked venison meatloaf — sliced into 1/2-inch slices
  • Two slices of bread, rustic white, sourdough or whatever you have
  • Spicy brown mustard
  • Fried onion straws
  • Pickles — I chose to use sweet and spicy, but use what you got
  • Two slices of American cheese

Instructions

  1. Slice your made venison meatloaf into 1/2-inch slices and heat up.
  2. Toast your bread.
  3. Generously spread mustard on your sandwich.
  4. Assemble the ‘wich! Start with a layer of onion straws and pickles. Next, add your meatloaf and repeat until stacked high.
