Honey BBQ Whiskey Turkey Bites

You can eat these bites on rice, in a tortilla, over mashed potatoes or by themselves. The sauce and turkey will speak for itself, and the journey to the plate is half the fun.

Ingredients:

1 turkey breast cut into 1-inch pieces

2 tablespoons cornstarch

½ teaspoon sea salt

1 teaspoon cracked pepper

1 teaspoon onion powder

1 teaspoon garlic powder

Sauce:

3 cloves garlic, minced and smashed

½ cup apple juice

½ cup whiskey or bourbon

2/3 cup low sodium soy sauce

1/3 cup ketchup

2 tablespoons apple cider vinegar

1 cup brown sugar

1 tablespoon maple syrup

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon cracked pepper

2 tablespoons Worcestershire sauce

½ teaspoon red pepper flakes

Instructions

  1. In a mixing bowl, mix together cornstarch, salt, pepper, onion powder and garlic powder. Add turkey bites and coat, set aside and let them get sticky, tacky.
  2. Over medium/high heat, add oil to hot skillet, add turkey bites to oil, careful not to crowd. Cook until crispy on all sides and internal temp reaches 150-155 degrees.
  3. Remove from oil and set aside.
  4. In a clean skillet, add whiskey/bourbon and bring to a slight boil, light with flame and allow the alcohol to burn off, leaving behind a reduced liquid.
  5. Add apple juice to the skillet, mixing with whiskey.
  6. Add remaining ingredients minus the brown sugar. Whisk and bring to a boil, reduce heat and keep whisking 1-2 minutes.
  7.  Add brown sugar and cook 2-4 minutes until all sugar has melted. This will help sweeten and thicken your sauce. Once the sauce coats the back of your spoon, it’s ready; remove from heat.
  8.  Toss your bites into the sauce and coat evenly.
