Instructions
Preheat your oven to 375°F.
Place the bagel halves, cut side up, on a baking sheet. Lightly toast them in the oven for about 4 minutes, just until the surface feels dry and slightly firm. This helps keep them from getting soggy.
Remove the bagels from the oven and spread a thin layer of BBQ sauce over each half. Use just enough to cover the surface.
Top each bagel with shredded mozzarella cheese.
Sprinkle an even layer of shredded smoked turkey over the cheese and sauce. If the turkey pieces are large, chop them smaller so every bite is easy to eat.
Sprinkle with cilantro.
Place the baking sheet back into the oven and bake for 8 to 10 minutes, until the cheese is fully melted and starting to bubble.
Remove from the oven and, if using, sprinkle with a little more chopped cilantro and parmesan cheese.
Let them cool for a few minutes before serving because they will be hot.
